Super Bowl Recipe: Hot Spinach Dip

1 – 9 oz. pkg spinach thawed, squeezed, drained and chopped
1 – 8 oz. pkg cream cheese softened (light Neufchatel works well, but not tub)
½ cup shredded carrots
½ cup dairy sour cream
1/8 tsp onion powder
½ tsp dried dill weed
1 – 2 oz. jar sliced pimientos, drained
Microwave directions: In 1-quart microwave safe casserole combine all ingredients, mix well. Cover with microwave safe wax paper or plastic wrap. Microwave on high for 3 to 5 minutes or until hot, stirring twice during cooking. Serve immediately with crackers and fresh vegetable dippers. (2 cups)
Can make ahead and microwave just before serving.
