Recipe: Rhubarb Bread

2 ½ Cups Flour
1 tsp vanilla
1 tsp baking soda
1 tsp salt
1 ½ cups brown sugar
1 egg
2/3 cup vegetable oil
1 tsp vanilla
1 cup buttermilk
2 cups cut up rhubarb (1/2” cubes)
Topping:
½ cup sugar
1 tsp cinnamon
Mix flour, soda & salt. Stir in brown sugar. In a small bowl, beat eggs, oil, vanilla, and buttermilk.
Mix together and add rhubarb. Pour into 2- well greased loaf pans. Mix topping ingredients and sprinkle on top of each loaf. Bake 325 degrees for 60 minutes. Check for doneness at about 50 minutes.
