Recipe: Potato Salad
Cooper Designs – WI
5 lbs. cooked, peeled, cubed potatoes
2 cups diced onion (drain on paper towel)
12-18 hard boiled eggs, chopped
1 quart Miracle Whip
2 Cups Henris Tastee Blend Salad Dressing
1 Tablespoon yellow mustard
½ tsp salt (or to taste may need to add more)
Dash of pepper
1 ½ tsp. sugar
2 Tablespoons cider vinegar
Put cubed, cooked potatoes, onion and egg in large bowl. In separate bowl mix remaining ingredients together well and mix into potatoes. Garnish with sliced radishes and paprika. Chill and serve.
