Recipe: Holiday Cranberry Bread

2 C. sifted flour
1 C. sugar
1 ½ tsp. salt
1 tsp soda
Juice and grated rind of 1 orange
2 T. shortening
1 egg
Boiling water
1 C. chopped nuts
1 C halved raw cranberries

 
Combine juice and rind from the orange, 2 tablespoons shortening and enough water to make ¾ cups.  Add, 1 egg, well beaten.  Blend liquid and dry ingredients.  Stir only until flour mixture is dampened.  Add nuts and cranberries.  Pour into greased pan.  Push batter into corners of pan, leaving the center slightly hollowed.  For well rounded load allow batter to stand in pan 20 minutes before baking.

Bake 350 degrees for approximately 1 hour or until toothpick comes out clean.
